Baked Salmon with Quinoa Salad

Ingredients:
2 salmon fillets
1 cup cooked quinoa
1/2 red onion, chopped
1/2 red bell pepper, chopped
1/4 cup chopped fresh parsley
1/4 cup chopped fresh cilantro
1/4 cup sliced almonds
2 tablespoons olive oil
Salt and pepper to taste
Directions:
Preheat oven to 375°F.
Place salmon fillets in a baking dish and season with salt and pepper.
Bake for 12-15 minutes, or until cooked through.
In a mixing bowl, combine cooked quinoa, red onion, red bell pepper, parsley, cilantro, sliced almonds, olive oil, salt, and pepper.
Serve salmon fillets with quinoa salad on the side.
